愛山, a rice suitable for sake brewing, is called the diamond of sake rice, and although it is delicate and difficult to make, it is a Daiginjo with a gentle flavor that has a relaxed depth and delicacy.
Seafood is recommended. It goes particularly well with local Japanese Sea crab, sweet shrimp, and yellowtail.
You can also enjoy sashimi and grilled fish.
